Oneida Correctional Facility - Cook Chill Expansion
Rome, NY |
| The $19,000,000 upgrade and expansion of this 100,000 SF facility allows the production of 252,000 lbs. of food each day. Under the cook chill process, huge quantities of food are cooked to a just-done state, then chilled rapidly and stored under tightly controlled temperature conditions. OGS Division of Design retained the services of M/E Engineering, P.C. to complete the complex design including items such as an ice building system capable of producing enough cold water to rapidly chill the hot processed food to a nearly frozen state, six cook tanks each having the capability of cooking one ton of poultry per tank per day and eight large kettles having a total capacity of 2,800 gallons, and refrigeration systems for food processing areas. |
